Simple potato soup recipe

This basic potato soup recipe can be adapted to include any extra vegetables you have lying around

Potato soup

This creamy potato soup is comfort food at its best. It’s wholesome, warming and simple. This is also works as a basic soup recipe that you can adapt based on what vegetables you have. Nice additions include broccoli, cauliflower, sweet potato and parsnips.


  • 1 onion
  • 1 large carrot
  • 2 sticks celery
  • 4 medium potatoes
  • 1 litre vegetable stock
  • Handful of green stuff – parsley, spinach, rocket or similar


  1. Chop the onion, carrot and celery into small pieces and sauté in olive oil
  2. Peel and chop the potato into chunks
  3. Add the potato and stock when the vegetables are starting to soften
  4. Simmer until soft
  5. Blend until smooth with a stick blender
  6. Taste and add salt and pepper as needed, add more water if it’s too thick
  7. Add your handful of green stuff and blend again – this adds nice little green flecks through the soup
  8. This should make a very thick soup, for a thinner soup, just gradually add water until it’s at your desired consistency
